Join William for an immersive day in our workshop located in Baden (Brittany), and step into the fascinating world of artisanal cutlery and design.

Upon arrival, you will discover the home of our workshop: a "tiers-lieu" (creative hub) dedicated to craftsmanship. Your experience begins with a presentation of the workshop, the machinery, and the tools. Put on your apron and follow your creative instincts by choosing your blade design (sardine or vitello) and your handle material: local Breton walnut wood or seashells.

Start your apprenticeship by shaping the blade through grinding (émouture) and personalizing it (stamping available). You will then perform the heat treatments (air quenching and tempering) to achieve the perfect hardness for your steel.

After the initial handle pre-shaping stages, you will enjoy a friendly lunch break.

The afternoon is dedicated to blade finishing and handle fabrication. You will polish and buff your piece until it reaches a smooth, flawless finish. Finally, you will conclude the day by learning and applying whetstone sharpening techniques to give your knife its ultimate edge.

William will accompany you throughout the entire process, sharing his passion and guiding you through the creative thinking required to craft this unique piece.

By the end of the day, you will leave with your handcrafted knife, ready to take pride of place at your dining table!

Practical Information

Note: Please wear casual clothes that you don't mind getting dirty (Personal Protective Equipment is provided). During the winter season, dress warmly. Remember to bring your own lunch.

Chef’s Knives: We can organize a specific "Chef’s Knife" workshop upon request.

Accessibility: Unfortunately, this workshop is not accessible to people with reduced mobility.

Booking and cancellation policy

You may reschedule your workshop to a later date if your request is made more than 4 days before the workshop.
If you cancel less than 4 days before the workshop, we reserve the right to refuse your rescheduling and/or cancellation request.
No refunds will be made if you make a cancellation request 48 hours before the workshop.
If the workshop has less than 3 registered participants, it may exceptionally be postponed. In this case, we will notify you sufficiently in advance for a postponement.
